47th best table in the world according to The 50 Best, Mayta (which means "Noble Earth" in Aymara) is the perfect place to discover Peru's gastronomic heritage. The ingredients are local and, in a way, so is the menu.

But tradition stops there. Jaime Pesaque brings modernity and elegance to it, while maintaining remarkable respect for the product and a certain simplicity (in the best sense of the word).

That lunch, we feasted on langoustines with perfectly silky texture, a memorable onion tartlet, and our first ceviche of the trip (it was also the best). Followed by hoisin-glazed suckling pig, perfectly carved tableside, and guinea pig that was both crispy and tender at once.

The atmosphere is elegant, the welcome is warm, the cocktails divine, the service impeccable, the dishware splendid… in short, a truly lovely spot not to be missed, especially since the prices are relatively gentle given how exceptional the experience is. Top.
