Behind this restaurant is an association, Hearth Project, which basically works to fight precariousness by focusing on "circularity and anti-waste in all its forms". A noble cause whose most visible part has taken the form of this restaurant … a space for experimentation and expression. Adeline, the "lady of the house", first takes a moment to set the scene and explain how the meal we're about to have contributes to financing their association and illustrates the principles they defend within it. The menu, essentially plant-based, is both complex and indulgent. Ordinary ingredients and bold preparations interweave in a very successful balance. Chef Elliott Van de Velde's explanations make your head spin a bit, there are so many and they're so detailed … but they have the merit of showing all the work hidden behind these plates with aesthetic, modern and controlled plating. The wine list is short, perfectly coherent with the very natural concept of the cuisine and features only well-sourced and elegant wines. Although the bill stings a little, you leave the place happy to have contributed to a lovely cause while eating so well. A UFO in the Brussels gastro scene.
