It was René Sepul who took us there for the first time, Bernard and me, in 2012 or 13, back when Mange Bruxelles came out. I remember that lunch perfectly, it was the complete opposite of what I knew about starred restaurants back then.
Modern and offbeat team but not stiff or pretentious for a second. Stripped-back, sober dining room, furnished with sublime and incredibly rare Hiroshima chairs.
A little natural sparkling wine from our buddy Belluard, just to work up an appetite. Remarkable and precise menu, with perfect balance between indulgence and lightness.
One of those moments you remember for a long time and that spark something in you. Since that day, the Folmer brothers' table has held a special place in my heart.
Against all odds, they've managed to stay the course perfectly and this lovely spot remains one of my favorites in Belgium... a place where you feel good, no matter what the stars say, and where you always leave happier than when you walked in.
