On trépignait d’impatience.We could hardly wait.

Last Wednesday, Kevin Perlot — the chef whose work we so loved at the now dearly missed Vertige — finally opened the doors of his brand-new Cosmos. A place of his own, set within the beautiful walls of the former fish market on Rue du Trône in Ixelles.

No sooner had we stepped inside than we were warmly greeted by “Philou” Lamourette, already by the chef’s side back on Rue de Flandres, as attentive as ever and always spot-on with his advice. He guides the evening with a wine selection that is already thoughtfully curated, fairly priced, and nicely balancing solid classics with inspired discoveries.

No à la carte here: a single tasting menu, five or six courses, giving equal pride of place to vegetables and seafood.

The meal begins gently with mackerel, celeriac, and a geranium dashi. Then comes the dish that truly launches the evening: outstanding scallops, with coral served as a chawanmushi. Power, balance, depth… simply stunning. A plate that captures everything we love about this cuisine, where simplicity outsmarts simplism, with intelligence, flavor, and impeccable mastery of cooking.

The rest does not disappoint: a decadent cabbage dish, monkfish lifted by a Cantillon sabayon, a memorable sweetbread with marjoram jus… and finally, citrus fruits from Éric Bruménil to close things cleanly — precise and radiant.

On the way home, one word comes naturally: sincerity. That of the team, the place, the products — and above all, the way they are brought to life.

The most exciting part? This is only the beginning. And a story that starts this well can only promise one thing: many, many beautiful evenings ahead.
