This is far from a first attempt. I'd never crossed paths with Laurence and Jason before this wonderful evening, but you can tell they've had time to think it through and refine their project. It's a bit like those people who build their house after living in three or four others... The impression of simplicity and lightness that comes across is simply brilliant, and their respective talents are all the better for it: the image of fish in water seems to have been drawn just for them.
Only about a dozen covers, arranged in an "L" around the kitchen. We have front-row seats but it's not a show; no pretension or attempt to dazzle. A menu of 10 or 12 courses. That's a lot, but the idea of alternating bites and "proper" plates makes the experience more dynamic and light. We're (yes, still) in very trendy contemporary Nordic cuisine (wood fire, fermentations, ...) but when it's played with such naturalness and such precision, you want more.
Natural wines well-advised and fairly priced, ingredients sourced without any fuss, friendly exchanges with an available and approachable team, homemade bread of the highest quality, creative dishes, sometimes daring but always deeply satisfying...
What more can we say except that we didn't notice the time passing and the rather long journey home wasn't enough to dampen our enthusiasm... four delighted and unanimous diners: can't wait to go back!
